This recipe is dedicated to those really hectic days, mainly because it's easy. The best part is it tastes absolutely delicious!

Zucchini is my all time favorite summer squash, it just works! ....with everything. seriously.


With that being said, today was one of those "all over the place days" , so all over place, dinner time took me by surprise.

I tossed one of those 17 cheese frozen pizzas in the oven for the kids (there wasn't really 17 but there was MANY different varieties of cheese), the different cheeses cooked and smelled pretty wonderful. Having the kind of day I had, I may not have made the best food choices throughout the day, so I decided to skip cheese overloaded pizza.

I was pretty excited to have found some zucchini in the fridge, then I found some tomato basil marinara and fresh mozzarella....umm need I say more...oh, parmesan, there that's plenty more!

With a handful and ingredients and a little bit of time, you have an amazing zucchini parmesan.

What you need:

  • zucchini (sliced lengthwise)
  • tomato/basil marinara sauce (I used storebought)
  • fresh mozzarella
  • parmesan
  • garlic salt
  • olive oil

* For this recipe I didn't list measurements because you can use as much/less to your liking

Begin by placing the sliced zucchini in a baking dish, sprinkle with a generous amount of garlic salt(mine had parsley flakes in it) and drizzle with olive oil

Place zucchini in oven on Broil (this just makes cook time faster) for about 10 mins. (you dont want zucchini to be too broiled) I like my zucchini to have a little crunch, remove from oven and spoon on marinara, mozzarella, and parmsean. Place in oven and continue to broil for another 5-10 mins, until cheese is nicely melted.
