This recipe is so simple and beautifully sweet, it would work great as a summer breakfast! Or dinner.. In my case. I actually walked into the kitchen to eat a peach, I remembered I had some leftover refrigerated pie crust, and the rest was history.

 

Peaches are delicious alone, but when they are warm and cinnamony sweet, wrapped in flaky pie crust, it makes them that much better. I made sure to add a crumble to the top for a sweet crunch.

 

 

 

What you need:

  • 1 refrigerated pie crust, slightly thawed
  • 2-3 peaches, sliced thinly
  • 2 tbsp + 1 tsp sugar
  • 2 tsp cinnamon
  • 2 tbsp melted butter
  • 1/3 cup old fashioned oats
  • 1 1/2 tbsp flour
  • 1 tbsp brown sugar

 

Begin by placing sliced peaches in a medium size bowl, add 2 tbsp sugar and cinnamon, toss lightly to coat peaches and set aside.

Preheat oven to 400 degrees fahrenheit. Unroll pie crust onto baking sheet lined with parchment paper. Brush crust with about 1 tbsp melted butter and sprinkle with sugar and cinnamon.

In a seperate bowl, combine oats, flour, brown sugar, and remaining sugar and melted butter. Combine. (should still be clumpy)

Place peaches outward from the center of the pie crust, leaving about an inch. Fold the edges up over the surrounding peaches. Sprinkle outer edges of pie crust with sugar and cinnamon.

Bake for 15-17 mins or until edges are golden brown
