Happy Hour foods at home? Yup, i think everyone is happy when you make Mango Chipotle Wings! This recipe has the perfect combination and sweet and spice. Great for your summer get togethers.

 

 

     

 

       

 

 

 

 

 

 

 

 

What you need:

 

  • 1 pkg chicken wings (about 10-12) tips removed
  • 1 mango, cut into small pieces
  • 2 chipotle peppers (I used ones that were in adobo sauce)
  • 1 tbsp cilantro
  • 1 lemon, juiced
  • 2 garlic cloves, minced
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey
  • 2 tsp paprika
  • 2 tsp garlic salt
  • 1/4 cup oil
  • 1/4 BBQ sauce

 

 

Begin by cutting wings at joints and place in large bowl.

In a blender or food processor, combine remaining ingredients EXCEPT for BBQ sauce. Blend until smooth.

Pour half of mixture over chicken wings, toss to coat. Cover and refrigerate for 2 hours or more.

Heat oven to Broil, and make sure oven racks are in the lowest positions.

Place chicken wings on large baking sheet in a single layer. Broil for 35-45 mins (make sure to check wings every 15 mins to turn, to prevent over charring)

In a saucepan combine remaining chipotle mango mixture with bbq sauce. Heat over med heat about 10-15 mins.

Remove wings from oven and brush with a generous amount of bbq sauce mixture. Serve with carrot and/or celery sticks and ranch dipping sauce.
