In light of my kids, among many others, returning to school this week I decided to make something featuring the iconic fruit of Back to School....the apple! There's no other fruit that says school days have arrived quite like a bright red apple.


After school supply shopping many kids are excited to get back to school and see their friends, except if you are 3 and starting preschool, then you are in no way, shape, or form ready for this 'back to school' least if you are my son.

He was excited when he got his Cars backpack, I thought we did it. He had the backpack of his dreams and he was ready for school. Turns out, he thought his Cars backpack was a super cool place to store his cars and bring them along on his back....not so much for any school related pruposes.

Now that we wake up before the sun on our morning escapade, dodging traffic to arrive to school on time..I thought I would make something warm, reminiscent of home, and great for on the oat muffins.

Apple oat muffins are made with sweet apples and healthy oats. Absolutely perfect for breakfast on the go, lunchboxes or an afterschool snack. You can never go wrong with muffins, especially if they are homemade (and have a streusel topping..)

What you need:

1 cup quick oats

1 cup all purpose flour

1/4 cup sugar

1 tsp baking powder

1/2 tsp baking soda

1 tsp cinnamon

1/4 tsp salt

1 egg

1/2 cup milk

1/3 cup vegetable oil

1/2 cup shredded apple (I used gala apples for sweetness)

12 apple slices, thin (I used granny smith because these will be placed on top of muffins, they are more tangy which pairs nicely with the streusel) 

Streusel Topping

2 tbsp flour

2 tbsp brown sugar

2 tbsp quick oats

1 tbsp butter, room temp,diced


Preheat oven to 400 degrees fahrenheit.Line muffin tin with liners.

Combine dry ingredients in large bowl, whisk together.

In a serperate bowl combine wet ingredients. Add wet ingredients into dry and combine.

Once combined, mix in shredded apple

Place mixture into lined muffin tin, they should be about 3/4 full.

In a small bowl add all streusel ingredients, mix with fork until mixture is clumpy (it should still look relatively dry)

Sprinkle top of muffin batter with streusel mixture. Place apple slices on top of each batter filled cavity. Press apple in lightly.

Bake for 20 mins, or until toothpick comes out clean
