I love breakfast, its my favorite thing ever...I usually go the sweet route, because I can eat something deliciously sweet and call it breakfast.

Although, sometimes I like to keep it light and fresh.

 

This isn't really a recipe recipe, but it was so good and so simple I had to share!

I love eggs and toast so this was my fresh and healthy version.

I started by slicing a multigrain loaf, it's one of those take and bake breads from the grocery store. I sliced it and tossed it in the oven to crisp it up on the outside while the inside remains super soft. 

Just piled on fresh spinach and tomato slices, under a fried egg..that's it! Perfection.

The spinach and tomato added such a nice freshness, and with the eggs being runny I didn't need any condiments. Of course you can add some of you like.

These are so quick to put together and look gorgeous...they would work wonderfully for a weekend brunch component.

Don't forget to lightly sprinkle the top with shredded cheese.
