During these holiday months are the perfect time to get really festive with food. Now desserts and sweets are definitely in full gear, they are just everywhere you turn in the stores. I have a sweet tooth I can't lie, as much as I want to bake, sometimes I just want to keep it simple.

I experimented with caramel for caramel apples, not sure if it was the caramel I used but I ended up with, well nothing that looked very appealing at all. I'll try that one again...soon

This time I kept it extremely simple using caramel chips! They are easy to work with, melt easy, and harden easy...just like chocolate. (chocolate is my friend)

I learned that a drizzle of melted caramel chips takes green apples a long way. You can dip them too, but if you just want a little sweetness this work like a charm

what you need:

  • 1 pkg caramel baking chips (or any flavor of choice, white chocolate, butterscotch)
  • green apples, sliced
  • lemon juice
  • water
  • 2 tsp oil (optional)

Begin by slicing green apples and placing them in a bowl of water and lemon juice. (I would add about 1 lemon per 3 apples) This will help apples last longer without turning brown.

Using a double boiler (or microwave) melt chips. When chips are melted and smooth consistency add 1 - 2 tsps oil, this will make the melted chips to have an even smoother consistency.

You can insert lollipop or popsicle sticks into apples or leave them in slices, remove them from water and pat dry using paper towel. Place apple slices on wax paper or any other non stick surface.

*It's important to work kind of fast, you want to work with melted chips while they are warm enough.

You can use a fork to drizzle melted chips over apples, or you can spoon melted chips into a ziploc bag, and cut a very small piece off one of the corners, it will work like a piping bag.

Option 2

Use oreos in place of apples, you can continue to use caramel chips or white chocolate. Drizzling over the oreos will create a mummy looking treat. Cut mini marshmallows in half and use for eyes.

Store in fridge to harden then serve!
