I don't consider myself a morning person, as much as I consider myself a breakfast person. I am not the get up and go type, I get up and want breakfast.

I am not one to refuse brunch, and you will probably never hear me say that I didn't eat breakfast, if I do it's probably a very bad day.

It is the most important meal after all..

 

I'm also a huge fan of yogurt, which is why I was inspired to make ganola. Granola is perfect, I love it. Its crunchy, sweet, it can be full of nuts, dried fruit, seeds, you name it...

This ganola is pretty simple, oats, nuts, coconut,  but really adds that pop of flavor and texture. During these colder months, it even tastes great as a warm cereal!

What you need:

 

  • 2 1/2 cups rolled oats
  • 1/2 cup sliced almonds
  • 1/2 cup chopped pecans
  • 1 cup shredded coconut (sweet or unsweet)
  • pinch of salt
  • 1/2 cup vegetable oil
  • 1/2 cup honey
  • 2 tsp cinnamon

 

Preheat oven to 325 degrees fahrenheit.

In a large bowl combine oats,almonds,pecans,and coconut.

In a smaller bowl, combine oil,honey,salt and cinnamon. Pour honey mixture over oat mixture, gently stir to coat.

Place granola in an even layer on baking sheet. Bake for 25 - 30 mins, gently mixing granola from time to time to prevent burning.

Remove from oven and transfer granola to another baking sheet. Spread in an even layer and let cool at room temperature

After about 15 mins, break up granola and place in air tight container or ziploc bag.
