During the week, our days our early and evenings are tiresome...when you aren't in the mood to give the kitchen you all your best bet is choosing a few ingredients that do a lot.


One of my favorite "super" ingredients is lemon, it's super flavorful and adds a beautiful tanginess to meats and vegetables!

Combined with herbs, and a touch of butter you can have yourself a pan of beautifully roasted dinner sitting in a delicious lemon herb jus.

What you need:


  • 2-3 lbs chicken (legs, thighs,or breasts, skin on)
  • 3 tbsp butter
  • juice of 3 lemons (keep slices for garnish)
  • 1 tsp basil
  • 1 tsp oregano
  • 1 tsp garlic powder
  • salt and pepper
  • 1 cup green beans
  • handful cherry tomatoes

Begin by preheating oven to low broil (if you don't have a low broil setting you can just preheat oven to 425 degrees fahrenheit)

*Ideally use a cast iron pan* if not you can use ovenproof pan or baking dish

Generously season chicken with salt and pepper. Add on garlic powder,basil, and oregano.

Reserve about half of the lemon juice.

Pour the other half of lemon juice on chicken. Make sure chicken is skin side up and place a sqaure of butter on each piece of chicken.

Place in oven.

After about 15 mins, turn chicken and pour on half of reserved lemon juice. After another 10 mins, turn chicken back skin side up, and pour on remaining lemon juice.

Add green beans and tomatoes to pan.(you may also add lemon pieces at this point)

Continue to roast for an additional 15-20 mins. 

Remove from oven and serve chicken and vegetables with spoon on cooking liquid on top.
