It's holiday season, with holidays all around it's easy to get caught up and order all the festive lattes, pretty holiday packaged treats, and everything else...

I for one, am guilty of enjoying the holidays and everything delicious it has to offer. Thanksgiving just passed us, and christmas is around the corner. I can't even deny that I will be chirstmas baking, for the time being I thought I would hit the gym a little more often and savour some healthier choices


This fritatta is great for everyone, and is very simple to cook, such a crowd pleaser for brunches or breakfast to get your day started right. 

What you need:


  • 6 eggs
  • 2 tsp olive oil
  • 1/2 cup  red onion, chopped
  • 1/2 cup spinach, frsh or frozen
  • 6 turkey sausage links (cooked), chopped
  • salt and pepper
  • 1 tsp oregano
  • 1 tsp parsley
  • 1 tsp garlic powder
  • parmesan


In a frying pan, over med high heat, sautee onions in olive oil until soft. add spinach, sautee for another 3-5 mins.

Beat eggs in a seperate bowl (*add a dash of cream for a creamier texture) add in oregano,parsley,garlic powder,salt and pepper, and parmesan.

Pour eggs over turkey and spinach and stir gently with a rubber spatula.

Place (ovenproof) pan in oven on 350 degrees fahrenheit and continue to cook for 15-17 mins or until eggs are set

Slice and enjoy
