Happy New Year!

This is my first post for 2016, how exciting! Usually my last posts would have been indulgent holiday baking, but..... we decided to travel this year. While we had a fantastic time actually spending the holidays with family, and creating beautiful memories...we did out A LOT. 

 

I figure it evened itself out, because if I wasn't on the road, I'd be baking up a storm...either way I would gain the holiday weight back, right..

So in light of the new year, resolutions are in the air, I've seen a lot about basically being a better person, and being a better person starts from the inside out!

My first 2016 post is none other than my favorite meal of the day, breakfast. This is my take on the super awesome avocado toast!

I eat toast all the time, especially with peanut butter... so why not swap out one deliciously creamy toast spread for a super healthy one which I can top with more healthy goodness!

What you need:

  • 2 slices multigrain toast
  • 1/2 avocado
  • 2 eggs
  • squeeze of lemon juice
  • mixed spinach greens or arugula
  • 2 slices bacon
  • 1/4 tomato, thinly sliced
  • shreds of asiago cheese

First fry your eggs, in olive oil, until desired readiness. Sprinkle with dried herbs, salt, and pepper. Toast bread then spread with avocado, squeeze with a little lemon juice(to prevent browning).

Half an avocado is enough for 2 slices of bread. Top with spinach greens, tomato,egg, bacon, and asiago cheese.
