Have you been following through with your new years resolution? It's a week in, but are you really trying to eat right?

Eating right doesn't mean a celery stick, there are many ways for us to incorporate healthier choices into our lives in a delicious way!

Salads are a great way to make lighter choices, but that doesn't mean they can't taste amazing!

 

Citrus is really in season right now, especially grapefruit. I know grapefruit has a bad rap for being bitter or sour, but if you haven't, you need to give the ruby red grapefruits a chance.

They do have a bitterness but they also have a natural sweetness, you're in a for a citrusy treat. I paired these ruby red jewels with strawberries, toasted almonds, pecans on a bed of greens with a sweet citrus vinaigrette to make this scrumptious salad. I sprinkled on some shredded coconut to really bring out the sweetness.

What you need:

  • 1 ruby red grapefruit, sliced into segments
  • 1/4 cup strawberries, sliced lengthwise
  • toasted almonds
  • pecans
  • sweetened shredded coconut (optional)
  • spinach greens (baby kale, baby spinach,mizuna)

 

Vinaigrette

 

  • 1 tbsp olive oil
  • 1 tbsp grapefruit juice, freshly squeezed
  • 1 tbsp orange juice
  • 1 tsp honey
  • 1 tsp stone ground mustard (optional)
  • salt and pepper
  • 1/2 tsp oregano

 

In a small bowl whisk together vinaigrette ingredients and set aside. 

Gently mix salad ingredients together and arrange on plate, drizzle with vinaigrette
