If you are looking for a creamy, flavorful, healthy soup recipe..look no further. I've put some butternut squash to work once again to make this super easy beautiful soup!

 

What you need:

 

  • 1 butternut squash, sliced in half lengthwise
  • 1 tbsp curry powder
  • 1/2 tbsp brown sugar
  • 2 tbsp olive oil
  • 1-2 shallots, diced
  • 1 tbsp garlic, minced
  • 2 cups vegetable broth (or chicken broth)
  • 1/4 cup thai cooking sauce
  • red pepper flakes 

Preheat oven to 400 degrees fahrenheit, sprinkle with curry and brown sugar, then drizzle with 1 tbsp olive oil. Bake for 40 mins or until tender

In a medium saucepan, add 1 tbsp olive oil and shallot. Heat until shallots are translucent or tender, add garlic and continue to heat through for 2-3 minutes. Add in vegetable broth.

Scrape out squash and add to sauepan, soup will look chunky. With an immersion blender, blend soup until smooth. Or you can just add soup to regular blender and puree (be careful using a regular blender while soup is hot)

Lastly add in thai cooking sauce, taste soup and decide whether you would like to add more. Continue cooking until soup is heated through. Serve with a sprinkle of red pepper flakes. Enjoy!
