I have a life long love for sweets, and I mean indulgent, rich, sweets. Sometimes a candybar just won't cut it. I'm pretty sure making mini cupcakes is my guilty pleasure, they are small enough not too feel too guilty about, followed by an intense workout...they are pretty worth it.

 

These are extra special because of the addition of fresh strawberries. It gives them a subtle, sweet fruity spin. I went all out and added the strawberries to the buttercream as well, making for the fluffiest, pastel pink frosting with little strawberries bits. 

You can even skip the buttercream, and they make for these really cute strawberry muffins perfect for Sunday brunch.

I used my favorite vanilla cupcake recipe as a base, you can find it here. 

I folded in about 2/3 cup of fresh diced strawberries.

I did the following for the buttercream:

  • 1 cup (2 sticks) butter
  • 3 1/2 cups confectioners sugar
  • 1 tsp vanilla
  • 3 - 4 tbsp strawberry puree

Start by creaming the butter with a mixer in a large bowl, then add sugar (about 1 cup at a time) until smooth. Add in vanilla, then 3 tbsp strawberry puree* mix until just combined, then begin frosting cupcakes

*puree 1/2 cup strawberries in a food processor and use 3 tbsp for buttercream
