There's something so fun (and easy) about a puffy sweet pancake that's cooked in the oven. To make this recipe that much more genius...all the ingredients and thrown in the blender and then placed to bake in a cast iron skillet!

This Dutch Pancake is perfect addition to your weekend breakfast or anytime you're in the mood for a different take on a pancake.

Drizzled with lemon juice and sprinkled with cinnamon sugar, it's such a treat!

What you need:

  • 3 eggs
  • 3/4 cup milk
  • 1/4 cup sugar
  • 1/2 cup flour
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 2 tbsp butter
  • fresh lemon juice
  • cinnamon sugar

 

 

Preheat oven to 425 degrees fahrenheit.  Melt 2 tbsp butter in cast iron skillet (do not burn butter). 

Place first 6 ingredients into blender, blend until well combined. Pour batter into cast iron skillet and bake until puffed up and set in the center, about 20-25 mins.

When ready, remove from oven  and drizzle with lemon juice then sprinkle with cinnamon sugar. Serve immediately.

 

*you can also top with additional butter, powdered sugar, and maple syrup.
