Who doesn’t love fries? They are hot, crispy, soft on the inside, and partner as a perfect side dish with just about anything! Swapping out regular potatoes for these sweet ones, creates a healthy boost to your restaurant favorites. 

 

Sweet potatoes are well known for their key role in sweet dishes, like the infamous sweet potato pie..yum. I’ve decided to play on their sweetness, making it savory with italian herbs. 

These fries have maintained the crispy-factor of fries we all know and love, in addition to serving up antioxidants and beta-carotene. A few simple steps is all it takes to whip up this delicious side

What you need:

  • 2 sweet potatoes
  • 2 tbsps flour
  • 1 1/2 tsp italian seasoning
  • olive oil 
  • pinch of salt

Preheat oven to 425 degrees F.

Wash, peel, and slice sweet potatoes into 1/4 inch thick slices. (make as thin or thick as you prefer)

Soak sweet potatoes in water for 15 mins – 1 hour. Drain, then coat in flour,seasoning, and salt. Place on non-stick baking sheet in a single layer. Drizzle olive oil evenly over top, then bake for 25-35 mins, turning at halfway point (if necessary drizzle on more olive oil.
