Who doesn’t love chicken? It cooks so quick, and you can infuse it with any flavor to jazz it up. We eat chicken a lot! Although it’s extremely easy to just rub some spices on it and pop it in the oven, there are days when I want to really infuse chicken to  give it a new dimension of flavor.


This lemon chicken recipe recipe was inspired by, well, wanting to utilize those lemons that were just sitting in the fruit bowl. I felt a citrusy twist on chicken would add a nice touch as well as please the two pickiest food critiques (my husband and my five year old daughter).


Now this recipe isn’t the quickest or easiest, but it sure is tasty, and well worth the extra steps. Best of all, it’s kid approved! My daughter is on the judging panel when it comes to something new, and I know I’ve succeeded when she takes her second bite and says “Yum!”.


This chicken works wonderfully for fresh tasting chicken tacos, served over rice, or even topped over a lemon-herb pasta dish.

What you need:

  • 8-10 boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 2 tsp salt
  • 2 tsp black pepper
  • 2 tbsp italian seasoning
  • 2 tbsp  ground ginger
  • 1 tbsp fresh ginger, thinly sliced
  • juice and zest of two lemons
  • 1 small/medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp flour
  • 1 tsp butter/margarine
  • 1 tsp brown sugar* (optional)

1. Season chicken with salt, pepper, italian seasoning, ground ginger, and juice of 1 lemon. Let marinade for 15 mins to 2 hours.

2. Heat olive oil in large skillet ; add in ginger slices to infuse ginger flavor in oil. Remove ginger after 3-4 mins.

3. Place chicken into skillet on med-high heat, brown both sides of chicken ( about 5-6 mins per side)

4. Preheat oven to broil. Remove chicken from oil and place in baking pan (preferably on a baking rack). Broil chicken for 30-40 mins, turning occasionally.

5. With remaining oil in pan, add onion and garlic. Sautee until onions are translucent; add lemon juice, zest and butter. Heat for about 5 mins, add flour and stir until flour is well blended, and sauce has thickened. *Add in brown sugar, to balance tartness with sweetness.

6. Remove chicken from oven, rough chop, and add into skillet to coat with lemon sauce.
