Sometimes what I have in the fridge doesn't always correlate with what I want to cook...but I think these are the times I have the opportunity to get creative.

This time I had the things I needed for chicken tacos, except for tortillas. When I saw that I still has some wonton wrappers I thought...perfect!

I decided to add fresh herbs and citrus to the chicken mixture to maintain that fresh taste, sealed in the wonton wrappers makes for perfet mini taco bites!

The crispiness of the wonton wrappers adds the perfect crunch paired with the juicy and flavorful chicken filling.

I baked these with just a light brush of oil and they are ready in 10 minutes!

These wontons are a sure crowd pleaser!

What you need:

  • 1 lb chicken breast, chopped
  • 2 tbsp oilive oil
  • 1 tbsp GOYA cilantro cooking base
  • bunch of fresh cilantro, finely chopped
  • juice of 3 limes
  • 1/4 cup red onion, chopped finely
  • salt and pepper
  • 1 tsp garlic powder
  • 12-15 wonton wrappers

Begin by cooking chicken with red onion and cilantro cooking base, until chicken is no longer pink. Let cool slightly. Tansfer cooked chicken to cutting board and rough chop to smaller pieces. Place in large bowl. Add fresh cilantro, lime juice, salt, pepper and garlic powder.

Place chicken filling in center of wontons (about a tbsp) , brush edges with water, fold over wonton wrappers and seal edges.

Heat oven to 375 degrees fahrenheit. Line a cookie sheet with parchment paper (optional) and brush with olive oil.

Place wontons on cookie sheet and brush top side of wontons with olive oil.

Bake wontons for 8 -10 mins or until golden brown, turning them mid cooking.

Serve hot with salsa and sour cream for dipping.

* I garnished them with green onion
