I absolutely LOVE tiramisu! I am actually a fan of everything cremy and sweet, I especially love creamy indulgent desserts. Eggs are a key ingredient in many decadent desserts, they are a necessary component but they are very heavy and you usually need six or more.

For this dessert I decided to skip out on eggs, this is my easy, egg-free tiramisu, and trust me its just as delicious! Its ideal for get togethers and a cinch to make.

I improvised a lot but this recipe works wonders! Vanilla wafers, ricotta, coffee and whipped cream make this tiramisu perfect!

What you need:

  • 1 cup  vanilla wafer cookies (coarsely crushed)
  • 1/3 cup coffee
  • 1 cup ricotta cheese (I used light)
  • 1 cup whipped cream
  • 1/2 cup icing sugar
  • 2 tbsp cocoa powder
  • chocolate shavings for garnish

In a large bowl, combine ricotta and icing sugar, gently fold in whipped cream. Place mixture in piping bag and keep in fridge until ready to use.

In mini dessert dishes (or large ones if you want to indulge) place crushed cookies on bottom layer. Pour hot coffee over crushed cookies, juste to gently coat them with coffee (add more for a more intense coffee taste).

Sprinkle cocoa powder over crushed cookie layer. Pipe a layer of ricotta mixture over cookie layer, then repeat with another layer of crushed cookies, coffee, cocoa powder, and ricotta mixture.

Place in fridge for at least 2 hours or overnight.

Serve topped with chocolate shavings.
