Dinner time is so much easier when dinner basically cooks itself, yup that's right. This one pot dinner is so effortless and so fast!

 

This recipe is extremely versatile and can be used with a substitution of different pantry items!

With everything cooking together, there is delicious flavor in every single bite!

 

 

 

What you need:

  • 1 bag/box pasta of choice (I've used rotini)
  • 2- 14.5 cans italian style diced tomatoes
  • 1- 14oz can chicken broth
  • 1 lb chicken breast, cubed
  • 2 tbsp olive oil
  • 1 tbsp oregano
  • 1 tbsp italian spice blend
  • 1 tbsp garlic powder
  • salt & pepper
  • 1 cup fresh mushrooms, quartered
  • 1/3 cup broccoli florets

In a large pot, on med high heat, add olive oil, chicken, oregano, garlic powder. Make sure chicken is coated in spices. Cook until chicken is no longer pink. Add pasta, canned tomatoes,chicken broth, salt, pepper, italian spice, mix and bring to a boil.

Once contents has began to boil, reduce heat to medium, stir in mushrooms and broccoli. Once pasta is al dente (about 9-11 mins) remove from heat and serve topped with grated cheese.

*** Be sure to remove from heat as soon as pasta is al dente, to prevent overcooked pasta***

You can substitute meat and vegetables with anything you have on hand or frozen :)
