So, lately my posts have been on the hearty/meaty side, well, because time has not been of the essence. I did not want to absolutely neglect blogging, so I decided to capture ‘blog-worthy’ dinners and share them with everyone. In our household, dinner, is incomplete without a  meaty counterpart, my husband would be astray if I tried to feed him solely vegetables.


Growing up, chicken dinners were very popular in our household. My mother’s go-to chicken fix, was a very kid friendly box of Shake-n-Bake. It was simple, you shake it and pop it in the oven, and bam…crispy chicken. While her famous crispy chicken was crispy, the skin always tasted best, and the rest was mediocre, to say the least.

Chili makes such a warm comforting meal on a cold day. Served steamy hot with the smoky aroma of delicious chili spices, the scrumptious bean medley, all held together in a tomato base, it’s the perfect one pot feast.

Before traveling to Tanzania, I had never incorporated coconut into any savory dishes. To say the least, I was missing out. Coconut milk is so rich and flavorful, it trumps any “canned sauce starter” you can think of.


Breakfast is my absolute favorite meal of the day, maybe becasue it compliments my coffee so well, and because it can be sinfully sweet or savory.

Today I had a whole wheat french loaf that was just asking to be made into french toast, while planning a recipe for coconut chicken tenders..I thought I could also add a coconut spin on breakfast!
