Breakfast is the most important meal of the day. For good reasons, nutritionist constantly stress the importance of eating a hearty and a healthy meal early in the morning. You want something that’ll satisfy your hunger cravings; something high in protein and natural sugars to regulate your insulin levels; and something that’s preferably delicious. Well, do I have a yummy treat for you.

Banana pancakes are highly popular amongst health foodies. While I prefer eating my fruits raw (as in this state, I ensure I’m getting all their vitamins and minerals), I love indulging in yummy sweet fruity cooked delicious goodness once in a while.

 

For this recipe, I went ahead and made my own syrup out of honey for the mere reason of not having any pure grade organic maple syrup around the house (tsk tsk to myself…maple syrup is delicious and good for you). Now, I know what you’re all probably thinking: how’s someone who claims to be such a health foodie soooo fixated on sugar and sweets, natural or not. I cannot stress the importance of having a low fat, high sugar and a high carb diet, and I promise my next post will be an adequately researched write-up debunking all negative myths about high NATURAL sugar diets. Suffice it to say, the misconceptions out there on the effects of having a high fat diet versus a high sugar diet are completely ridiculous. (Believe it or not, people actually think it’s healthier to eat two Macdonalds’ burgers than ten bananas – THIS IS RIDICULOUS!).

But for the sake of avoiding a long winded rant, I digress.

This recipe is soooooo simple, you’ll scream with joy at how deliciously tasty it is! I PROMISE! So without further ado, let’s get cooking!

What you’ll need:

For the pancakes (recipe makes about six pancakes)

  • 2 bananas
  • 2 (ORGANIC FREE RUN) eggs

For the syrup (feel free to use pure grade maple syrup, if you so choose)

  • 3 TBLSPOONS of honey
  • 1/2 TSPOON of cinnamon
  • a cap full of unsweetened vanilla extract

Begin by mixing all the ingredients for the syrup together and placing it by the side as you prepare your pancake. Blend the bananas and eggs together. This will make a thick pancake batter. If you’d prefer fluffier pancakes, feel free to add flour.  Proceed to fry your pancakes.
