Let me start by wishing you a Happy Cinco de Mayo! May your day be filled with delicious mexican cuisine and maybe a margarita…or two!


I decided that I would start off the festivities at breakfast, because what’s better than a full day of mexican cuisine? I wanted to make heuvos rancheros, but with a fresh twist. Typically they are eggs served on a crisp corn tortilla, topped with a tomato sauce, with a side of refried beans, rice, and avocado.

As delicious as that sounds (growing up eating plenty of beans and rice), I wanted to lighten up the dish but keep it flavorful.

I skipped the rice and refried beans, and subbed in a fresh fiesta salad, a sprinkle of feta, and slices of creamy avocado.

I had made the fiesta salad the day before, so it was quick enough to put together.

It makes for a very flavorful breakfast, with tons of texture,and just the right amount of freshness and creaminess.

What you need:

  • corn tortillas
  • 2 tbsp olive oil
  • eggs (fried)
  • 1/2 cup salsa or tomato sauce
  • 1/2 tsp chili powder
  • feta cheese (for sprinkling)

Fiesta Salad

  • 1/2 large red onion, diced
  • 2 ears of corn, grilled
  • 3 ripe tomatoes, seeded and diced
  • 1/2 cup cooked/canned red kidney beans or black beans (rinsed)
  • 2 tbsp finely chopped cilantro
  • 2 lemons, jjuiced
  • salt and pepper to taste

Begin by preparing fiesta salad. Add all ingredients to bowl and gently toss together. (* If possible make salad in advance, the longer it sits in the fridge, the more the flavors merry) **Avocado can be added to salad to salad right before serving to prevent browning

Cover with plastic wrap and set in fridge until ready to serve.

Heat a large skillet on med/high heat. Brush with olive oil and heat tortilla about 1 min per side, until it starts to puff up a bit.

In a seperate skillet, fry eggs about 3-4 mins or until desired firmness.

In a saucepan, warm through salsa or tomato sauce.

Place eggs on top of tortilla, spoon on some salsa. Place salad on top of salsa. Sprinkle on feta cheese and additional cilantro (optional)
