For some reason, the peanut butter and banana combination is the most championed pair of all. It’s like no one’s heard of the blueberry cashew relationship. It’s as if one day I, Chi-Chi Ayalogu, paired the two and fell in love, literally (don’t hate me for using this word). I absolutely adore, no LOVE how the cashews enhance the blueberry flavour and every sip is a journey into heaven.

And this is not even an exaggeration: this is, BY FAR, my favorite smoothie ever!! mmmm YUMMMM!!

Even more amazing is that this smoothie is loaded, and I mean LOADED, with energy in every sip. Made with a variety of veggies, nuts, and fruits, it’ll keep you active the whole day. I truly wanted optimum energy, as in something that’ll keep me full the whole day, and that’s exactly what I got with this berry nutty smoothie.

We have here almond milk, cashews, wild frozen blueberries, baby kale, and baby carrots.

This smoothie is technically my anti-aging remedy. The carrots, blueberries, and kale are packed with vitamins and minerals that fight to prevent cancer, and clear the skin by cleaning out the system, giving a revitalizing, youthful glow. The nuts have all the essential fatty acids that kick away the clogging fats in your system. Not to mention, nuts are excellent sources of protein.

If for some reason you’re worried about adding and kale into your mix, you can always use spinach and / or omit the carrots. I don’t advice this, but since the cashews and blueberries overpower every other ingredient on this recipe in taste, it doesn’t make a significant difference to the texture and taste of the beverage.

Now without further ado, let’s get whipping.

What you’ll need:

  • 2 cups of wild frozen blueberries
  • 1/2 cup of cashews (more if desired)
  • A handful of baby carrots – approx. 7
  • A handful of baby kale – approx 1/2 to 3/4 cup
  • 1 1/2 to 2 cups of almond milk (add more or less depending on the consistency you’d prefer your drink to be)

Place all the ingredients in a blender and blend till smooth and creamy.

ET voila…

You can share this drink with friends / family… Makes about four servings. Or you can be like me and drink the whole thing. YUMMM
