So I haven’t been cooking much lately, unfortunately. I’ve been busy. Y’know, galavanting through the streets of good ol’ ghost town, Ottawa; taking pictures of strangers, attempting to work on assignments but falling terribly short of completing anything of import. Yes, I’ve been busy. So like any busy student artist extraordinaire, I need a quick and simple easy recipe to satisfy me on those long adventures into the wild (not so wild) Ottawaian nighttime. The quickest answer to my dilemma, of course, is an even quicker than usual, smoothy recipe. I call this “The Phenomenal Power House Smoothie,” not only because I’ve wanted to say the words power house for the longest time, but also because, yes you’ve got it, this smoothie recipe has kale, my favorite vegetable in the whole world.

Now if you don’t eat kale, you’re lacking in your diet, plain and simple. This vegetable is an abundant source of vitamin k, which reduces the chance of cancer and other diseases. It’s the ultimate powerhouse vegetable, rich in antioxidants and various other vitamins. For more information on kale, check out this source and try here also.

So for this creamy, decadent smoothie, we’re using a banana, chia seeds, kale, and scrumptious raw almond butter (click here for the almond butter recipe). While you can opt for any other nut butter instead, I read here and here and in a bunch of other blogs that peanut butter is high in aflatoxins, so you probably want to stay away. Cashew butter’s tasty and healthy, and almond butter’s just phenomenal, so I’d advice that you stick with these.

So without further ado, let’s get whipping!

For this smooth and tasty meal replacement / snack, you’ll need:

  • One frozen banana
  • 3/4 almond or coconut milk
  • 2 teaspoons of chia seeds
  • 1 1/2 teaspoon of almond butter
  • 3/4 of a kale branch (I’m using Curly Kale, but Dino kale or whatever kale you prefer would work)

Starting with the milk, toss of the ingredients into a blender and blend until absolutely smooth and creamy.

Et voila! Enjoy!
