If you’re like me, and you love sweets more than anything else in the world, then you’ll the scrumptious Blueberry Cake-ball. It’s simple to make, sweet, absolutely moist, and totally delicious. Also gluten-free, and an excellent choice if you’re craving sweets but looking to lose some weight and keep it low fat / calorie!!! Go ahead and eat the whole thing if you don’t wanna share!!! You won’t regret it!!

 

         

Blueberry Cake-ball (2 servings)

  • 3/4 cup of cashews
  • 1 1/2 cup frozen blueberries
  • 1/2 cup of dried coconuts
  • 1-1 1/2 tsp(s) honey (to keep this 100% raw, use raw honey)
  • A pinch of cinnamon

Place the cashews, blueberries, coconuts in food processor and mix until broken into little pieces

Transfer contents into mixing bowl, add honey and hand stir until the mix stick together. If desired, add more honey to make it extra sweet and gouey!

Roll bits of the mix into balls.

Place into the freezer for two to three hours, sprinkle bits of coconut and cinnamon on top, and serve.
