In my search for mardi gras recipes, of course I stumbled across something sweet, and of course I had to make it. How could I ever bypass these lightly sweet, deep fried, pillow pockets?!…I couldn’t.

 

These aren’t traditional donuts, unless you live in New Orleans. They aren’t round, and have no hole in the center, but these squares of deliciousness will  bring a little taste of New Orleans to your breakfast.

I have to admit, they are no quick fix. It does take time for the yeast to rise, then rolling out the dough and cutting into squares. It does work great for a plan ahead breakfast, the morning of, they just need to be cut and deep fried.

 

These were a huge hit, no one was able to stop at one, including myself. These beignets are so crisp on the outside, and soft and pillowy on the inside. The perfect companion to your morning coffee.

I just came to realize I wasn’t generous enough with the confectioner’s sugar, in some recipe photos there is a nice little mountain of sugar right on top. Although my light dusting of sugar worked perfectly for us.

What you need:

  • 1 envelope active dry yeast
  • 3/4 cup warm water
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 1 egg
  • 1/2 cup evaporated milk
  • 3 1/2- 4 cups flour
  • 2 tbsp butter
  • confectioner’s sugar, for sprinkling

In a large bowl, dissolve yeast into warm water (about 5 mins).

Add in salt, egg, and evaporated milk, mix on low speed. Add in 2 cups of flour, beat until it starts to come together. Add in butter, and mix. Add in remaining flour, until a ball of dough starts to form. At this point, continue adding flour slowly until dough is no longer sticky.

Place dough in lightly greased bowl, and cover with plastic wrap. Place in refrigerator to rise overnight.

remove dough from fridge, and roll out on floured surface. (1/2 ” thick) With a sharp knife cut into squares.

In a large saucepan add at least a quart of oil, heat to 360 degrees fahrenheit.

Place 2-3 squares into hot oil, beignets should quickly rise. When golden brown, turn over to opposite side. When both sides are golden brown, drain onto paper towel lined plate.

Sprinkle with sugar, serve warm.
