I am a huge fan of ice cream, or basically anything cool and sweet in the summertime. So are my kids, and as delicious as frozen treats are, sometimes I like to sneak in some fun healthier choices. They LOVE making popsicles!

There is just something when it comes to kids pouring juice and fruit into the molds, and finding frozen popsicles in a few hours, it’s almost magical!

These particular popsicles were something I kind of just stumbled across..

I had some vanilla coconut milk (that I bought on accident thinking it was the original flavor), I found it WAY to sweet to just drink as a beverage. I have been incorporating it into several smoothies and other things, the cut down on added sweetness, and I thought it would be fun for the kids to use it a popsicle base as well.

It’s sweetness really works frozen, and it’s very refreshing on a hot day. The best part is that these couldn’t be more simple to make!

You just have pour in the coconut milk with some fresh fruit, any flavor, and freeze!

I had mango and kiwi which I thought were perfect to add color and a tropical pop.
