Alright, so as much as a bake for the holidays, I’ve introduced my kids to baking as well. My daughter is especially fond of it. One weekend we found ourselves in p.js watching these really creative cake making tutorials . Seeing as the videos were about 9 mins long, my daughter has this preconceived notion that making a cake that looks like the castle from Frozen is easy and only takes 10 minutes.


Clearly thats not the case, and there was really no birthday or occasion that needed us to make a 3 tier cake,but we could still bake something…

She refused to settle for anything less than a cake, mainly because she wanted to frost it. I was really trying to eat less sugar as a new years resolution, so we came to a compromise (or I kind of tricked her, compromise sounds better).


To make our “cake” healthier, I decided to use oats in place of flour and banana to substitute for sugar. I always store bananas that are “too bruised” in the freezer for times like these.

*Tip: pulsing oats in the food processor until more of a flour-like consistency makes perfect oat flour.

I used a baking pan to form a “cake” that would later become squares. We did make a cream cheese frosting as well.

I felt this recipe was a healthier option than cake, ingredients can be substituted and add-ins like nuts and chocolate chips can definitely be added!


What you need:

  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 3 medium bananas, mashed
  • 1 1/2 tsp vanilla
  • 1 1/2 cups *oat flour
  • 1/2 cups flour
  • 1 tsp baking soda
  • dash of salt

Cream Cheese Frosting

  • 4 oz cream cheese
  • 4 oz butter
  • 1 cup icing sugar

In a medium bowl, combine oat flour, flour, baking soda, and salt. Set aside

In a large bowl, cream butter and sugar until light and fluffy. Beat in bananas and vanilla. Stir flour mixture into creamed mixture, until just blended.

Transfer mixture into a 15 x 10 x 1 in baking pan that is greased or lined with parchment paper.

Bake 20-25 mins or until toothpick inserted into center comes out clean. Let cool

To make frosting, cream together butter and cream cheese. Add in vanilla and icing sugar, 1/2 cup at a time, beat until smooth. Frost banana squares! I sprinkled bars with some crushed chocolate as well.
