Chili makes such a warm comforting meal on a cold day. Served steamy hot with the smoky aroma of delicious chili spices, the scrumptious bean medley, all held together in a tomato base, it’s the perfect one pot feast.


This chili blows the classic meaty recipe out of the water, with three times the vegetables and a delicious veggie burger substitution, even carnivorous husbands won’t miss the beef ;)

A friend recently introduced me to this recipe, and I am so glad she did. Preparation is a breeze, toss everything in a pot and simmer to perfection. This chili literally makes itself. So bypass the beef, and grab a beautiful assortment of colorful veggies and you are one step closer to a warm and delicious dinner.




What you need:

  • 3 cups celery, diced
  • 2 cups corn
  • 1  red bell pepper, diced
  • 1 green bell pepper, diced
  • 1  yellow bell pepper, diced
  • 1  onion, diced
  • 1 bunch of cilantro ,finely chopped
  • 6 diced Morning Star veggie burgers, cubed
  • 3 cups of vegetable broth (split)
  • 1 can of cannellini beans
  • 1 can of black beans
  • 1 can of red or pinto beans
  • 2 cans of diced tomato (basil/garlic)
  • 1/3 cup chili powder
  • 2 cups water
  • pepper to taste

Begin by boiling onions in 1 1/2 cups vegetable broth, about 5-10 mins. Add remaining vegetables and continue to boil.

Meanwhile, drain and rinse beans. Add in veggie burgers, beans, tomatoes, water, pepper, chili powder,and remaining vegetable stock.

Simmer about 15 mins.

Serve hot topped with cheddar cheese, and your choice of cornbread or crackers.
