From time to time, I get these immense cravings for juicy burgers…I mean who doesn’t, they are just soo good. Ordinarily, I would probably stop by a burger joint, in between errands, to satisfy my craving. Although, sometimes burger pitt stops are accompanied by sugary sauces, french fries, and maybe a soda…so I decided to fulfill my needs in my own kitchen.

I wanted a juicy burger, but I wanted it to take on a fresh bite. I chose to skip out on ‘burger essentials’ such as ketchup, mayo, and relish, and substitute them with tomato, avocado, red onions, and dill pickles. I thought for sure my husband would request his beloved ketchup and friends, but turns out he didn’t miss them at all!

Avocado adds a lovely creaminess, fresh ripe tomato gives all that tomato flavor in a slice, and dill pickles and sweet red onions add the perfect sweet and sour note, with a fresh crunch.

Now we do love our cheese burgers, so instead of processed orange cheese product, I used two little pieces of monterrey jack to give it a little kick. (Pepper Jack is a great choice if you like heat, we kept it mild for our little ones)

What you need:

  • 2 lbs ground beef
  • 1 tsp oregano
  • salt and pepper
  • 1 avocado, sliced
  • 1 lemon (to season avocado)
  • monterrey jack cheese slices
  • 8 buns
  • 1 tomato, sliced
  • pickles
  • red onion, thinly sliced
  • green leaf lettuce

Shape burgers in to patties, (I made small burgers so I made about 8) indenting the top. Season both sides with salt, pepper, and oregano. On med-high heat, place burgers on skillet, and cook about 8 mins each side. During last 2 mins of cooking, place cheese on burgers.Alternatively, you can place burgers on an oven rack, and broil until cheese is melted.

On a separate skillet, on med high heat, melt a tsp butter. Place buns, cut side down until golden brown (no more than 30 secs).

Squeeze lemon juice on sliced avocado to prevent browning, then sprinkle with salt and pepper.

Place lettuce, red onion, and pickles on bottom half of bun. Place burger patty, and top with tomato, and avocado
