Just last week my mother-in-law came to visit us. It was more than a pleasure having her stay with us, since she lives so far away. While she did not take a break from helping out any way she could, the only time she relaxed was to enjoy a home cooked meal. That being said, I thought pork ribs would be a fabulous way for her to enjoy the taste of Texas. Although, since she doesn’t have any sort of sweet tooth, I made these ribs deliciously savory.

 

 

Slow cooked in the oven, rubbed with spices, these ribs are finger licking scrumptious! Now these would be delish with some potatoes on the side, but I opted for a simple sautéed mushroom. I personally think mushrooms compliment any dish, and these ones took no more than 5 mins to prepare. I also chose to add some greens to my plate, a delicious spring mix with a raspberry vinaigrette ( I had to sneak in something sweet).

*For the spice rub, I made it to accentuate a very savory flavor. Any spice can be switched out for one that will contribute to the type of dish you make :)

What you need:

  • 4-5 lbs pork ribs
  • 1/2 bag baby carrots
  • 1 small onion, diced
  • 1 tbsp worcestershire sauce
  • 1 tbsp soya sauce
  • 1 tbsp tomato paste
  • 1 tbsp hickory BBQ sauce
  •  2 tsp salt
  • 2 tsp black pepper
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1 tsp ground ginger
  • 1 tsp tumeric

Sautéed Mushrooms

  •  1- 8oz pkg mushrooms
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 tbsp parsley flakes
  • 1 tsp corriander

Begin by cleaning the pork ribs and removing any excess fat. Layer a baking pan with carrots and onions. Combine spices in a small bowl.Ina separate bowl, combine worcestershire sauce, soya sauce, bbq sauce, and tomato paste. Place ribs on baking sheet, overtop of onions and carrots. Rub with spice mixture, then brush with half the sauce mixture. Cover with foil and place in a 300 degree oven.

After an 1 hour, remove foil and brush on remaining sauce mixture. Bake for another hour and 15-25 mins. During last 10 mins of cooking, set oven to broil. This will char and crisp each side of ribs. (after 5 mins, flip ribs)

Remove from oven and cut into sections.

For the mushrooms:

Wash mushrooms. On med-high heat, place olive oil and butter into skillet. Add in whole mushrooms, garlic, and seasoning. Sautee for 5-7 mins.
