Earlier, Jessica made a delicious White Wine Vegetable Penne and I’ve been thinking to try something relatively similar, minus the alcohol and the margarine. In short, let’s just say I wanted a healthy alternative to the fatty Alfredo, creamy sauce we all love so dearly.

 

This thick pasta sauce is made with just a few ingredients and you will absolutely love it. We’ve got all the healthy fats from our olive oil and our avocado that’ll just clean out your system and keep you feeling energized and healthier.

Still, I caution for you to eat this in moderation. Though it’s healthy and damn delicious (dammit, it’s delicious) it’s high in fat.

What you’ll need:

  • 1 box (375g) of Whole grain penne
  • 1 large and ripe avocado
  • A few large leaves of basil (approximately five)
  • Salt (for taste)
  • Black pepper
  • A dash of Garlic powder
  • 1/2 teaspoon of garlic puree
  • 1/2 a teaspoon of dried rosemary leaves
  • 8oz of sliced Mushrooms (or as many as you’d like)
  • Pinch of cumin
  • A small onion
  • 3/4 to 1 cup of almond milk
  • 2 tablespoons of olive oil

Cook your pasta, seasoned with pepper, salt, garlic powder, and cumin.

With a high blender or a food processor, mix your avocado with 1/2 a cup of almond milk and basil. Blend until everything’s pureed and well mixed together. If you’d prefer your avocados spicier, blend with spices of your choice or the same ones as I’ve listed above.

With a large skillet and on LOW heat, sauté your onions with olive oil, then add the mushrooms, a pinch of salt, black pepper, rosemary leaves, and garlic puree. Stir then place a lid on the skillet to allow the vegetable to properly absorb the delicious flavours.

After a few minutes, mix the avocado/basil puree with the vegetables, STIR. Slowly pour the rest of the almond milk into the the skillet, stirring occasionally. I like my sauce really creamy and I found that 3/4 cups of milks was just right. However, feel free to add more or less, depending on how you like your pasta sauce.

Et voila!! Cream of Avocado sauce. You will absolutely adore this dish, it’s certainly my new favorite. Say, I might just try the same thing with cashews!!!! YUM!
