When I think potato salad, first thing that comes to mind is a very creamy and heavy side dish that goes great with BBQ. Although I love the classic recipe, I decided to try a lighter take on a delicious potato side dish.

This recipe isn't as creamy or heavy, but it's definitely packed with flavor. This recipe has sweetness and tang from the honey mustard, combined with red onions, bacon bits, and parsley for color and texture.

             

 

 

 

What you need:

  • 3 lb small yellow potatoes, quartered
  • 1/4 cup stone ground mustard (or the grainiest mustard you can find)
  • 1/4 cup honey
  • 1/3 cup olive oil
  • 2 tbsp parsley, finely chopped
  • 1/2 medium red onion, diced
  • 1 tbsp bacon bits

Begin by bringing a large pot of salted water to a boil. Add potatoes and boil for 8-12 mins.

Meanwhile, in a medium bowl, whisk together honey,stone ground mustard,and olive oil.

Drain potatoes then toss in large bowl with honey mustard mixture. (do this while potatoes are still warm)

Add in parsley, onion and bacon bits.

Cover and store in fridge until ready to serve.

*Potato salad can served right away, flavors merry together the longer it sits in the fridge*
