This sandwich is a perfect lunch quick fix, especially if you’ve got some leftover chicken in the fridge! If you don’t, worry not because paired with some delicious fries, you have yourself a yummy light dinner.

 

We eat chicken a lot, so it’s no surprise we find leftover chicken in the fridge quite frequently…and nothing tastes better than reinventing leftovers to create something delicious!

I had been using cajun seasoning quite often to make some mardi gras inspired dishes and decided to keep the spicy kick going throughout the week. Spices can always be added when reheating chicken by adding spices and bbq sauce.

I added red cabbage for color and crunch, it adds a coleslaw feel to the meal without being too heavy.

For another added touch, I used some refrigerated biscuits to create these delicious bites. They add a flaky, buttery touch to your ordinary sandwich.

What you need:

  • 2 cups shredded cooked chicken thighs
  • 1 pkg refrigerated biscuits, bake as directed
  • 2 tbsp BBQ sauce
  • 1 tbsp cajun seasoning
  • 1/2 cup red cabbage, shredded
  • pickles
  • 1 tbsp garlic aioli

In a skillet, on med-high heat, add chicken, BBQ sauce, and seasoning. Heat until chicken is heated through, about 5 mins.

Slice biscuits in half, spread aioli on both sides. Add cabbage, chicken and pickles. Enjoy!
