Sometimes we’d like to whip up a meal in five minutes, hassle free with little to no cooking. But we go about it the wrong way when we invest in canned or boxed instant meals. Even worst, don’t make me say it, FAST FOODS. Alright, ditch the sodium filled, artery clogging stuff for this simple, sweet and savory (at the same time?) delicacy.


This sweet potato dish will satisfy you, 100%.

What you’ll need:

  • 1 small to medium size sweet potato
  • 1/2 a cup of coconut water OR 1/2 cup of coconut milk (add more or less water/milk depending on how thick and creamy you’d like your soup to be)
  • Pinch of rosemary
  • Pinch of garlic powder
  • Salt (for taste)
  • Pepper
  • 1 tsp of olive oil

Peel and cut, then drizzle olive oil on the sweet potato. Toss the potato into the oven and bake for 50mins.

Let your potatoes cool, then blend them with all other ingredients until smooth and creamy.   You can reheat or enjoy this dish while it’s cool.
